 Bruised Ginger

Please help! I wanted to try a new recipe...Apple Wine... it calls for "bruised ginger." I have no idea what this is, I've looked for it in stores, but cannot find it. Does anyone know what I should be looking for? Also, any tips on making the wine would be appreciated...I've never tried to make wine before.

    I would think that it meant the ginger was a little crushed or softened. The wine sounds delicious.


    Although it could have been Gilligan or the Professor .

      Just take a piece of fresh root ginger and give it one big whack with the heel of your large cleaver/knife. This'll "bruise" it nicely for you.

          Come on...someone had to make the joke. Now it's out of the way, paving the way for i95 to provide the visual element.
