Today, I attended the Family Farmed Expo organic food show in Chicago. Great speakers, great food. I sampled a natural casing Bison hot dog from Northstar Bison. "John Fox, you absolutely have to try one of these!" They rank with the best. www.northstarbison.com

    That's certainly exciting news. I went to the site, but couldn't really find out any information about the dog. Since buffalo has so little fat, I was wondering how they dealt with that. Though I've yet to try an ostrich dog, I know they cut it with pork or beef, just to add a little fat

    About the bison dog, specifically, I'd like to know: how many to a pound, fat content, calories, etc. Do you have a package with the nutritional information?

    Additionally, how was the dog that you ate prepared? Thanks.

            lol...The Born in Chicago part is CSD signature. He forgot to put it in so Steve did it for him.

            Those dogs do sound interesting though.

              I am surprised bison meat is not discussed more often in these forums. The bison products I have tried, I like.

              I have not tried the dog specified, but it looks good. Hannaford in my area carries a bison/beef dog mix and it is not bad at all. It costs about $5.00 a pound with about 5 or 6 to a pound. It is not an organic dog although it claims to be natural. As far as the nasty numbers go this dog is about 25% better overall. I imagine a pure bison dog would do even better in that regard.

              My first introduction to bison meat was about 8 years ago when I had my first bison burger. It was at a catered BBQ media event and the food was free. Among the choices were hamburgers and bison burgers. Of course I started out with one of each, a perfect opportunity to compare and contrast. There was simply no comparison, the bison burger won hands down.

              Since then bison is a part of my diet. I look at it as the "other red meat."

                Bear, they were selling the bison dogs in a 9/1 aka 9 to a pound package for $6.99. That may have been a special price for the trade show. The dog I ate was prepared in a Nesco at the display table. Nonetheless, it was great. If boiled or char grilled, probably much tastier. Info on the dog is listed on the main page website under categories: hot dogs. I'm sure an e-mail or phone call would probably get the answers to all your questions. I'm off to Madison, WI now for Canoecopia, the largest canoe and kayak expo in the midwest. Monday, Tuesday, and Wednesday is the Wisconsin Restaurant Expo in Milwaukee. The fun never stops!
