I'm looking for a good source for buns/rolls in the NYC area. Looking for something with a little more body than the usual soft stuff, but not to the point where it's chewy or crusty. Thought about the potato breads, but they seem too sweet and there's too much of them. My goal is to find something that will really hold up to a nice portion of condiment(S). I read the topic on the New England split rolls (like Nedick's used to use here {since last October anything to do with New England is TABOO in my household}) and that might work. I do have an aversion to buttering rolls for dogs or burgers (still get sick thinking of Fuddrucker's). So if you mavens have any ideas please let me know. We hope to start construction in a week or so, and my nerves are a little jangly about these unresolved issues. Merci, mes amis.

Pechter's in Harrison, N.J. and Rockland Bakery in Nanuet are the only 2 sources I know of that produce quality hot dog rolls. Bakers Touch used to, but no longer makes them baked separately. They are stuck together like ordinary supermarket buns. People I know who used these rolls for their restaurants are up in arms and complained, but to no avail.

Wonder Bread may also bake a food service bun. If there is a Rockland Baking or Pechters routeman serving your area, that is your best bet. I think there is a Stroehmann/Rockland Baking connection, for I often see a Stroehmann semi at the loading dock of Rockland Baking on Demarest Mill Road. I have never been able to see if the buns are being pushed into the truck or out of the truck, however. Rockland Baking is a fascinating place to visit. They have a retail bakery selling cookies, cakes, donuts, pastry, etc. From there, you can walk into the bread baking area, passing the bagel machine, and proceed to the cooling rack area where you can select freshly baked bread and rolls. You can also select bags of food service hot dog rolls, hamburger rolls, and large (Burger King Whopper) size hamburger rolls on the way out. The bags always say "Dist. by Rockland Bakery, Nanuet, NY 10954".

David, Thanks very much. Wonderbread has such negative associations that I'd be afraid to have that label in my place. I know that Sabrett also packages a roll. I'll keep looking; I'll know it when I find it. Bill

The Rockland Baking buns plot thickens. I just pulled out the last bag I bought two weeks ago from the freezer, and this bag includes the Pennsylvania info: (ARP) and CT info: CT Lic. 3905. This points to a Northeast Foods/Automatic Rolls connection. I have bought Sabrett buns by the bag at Fordham Food Supply, 2595 Webster Avenue, Bronx. Sometimes the bags have no printing on them, sometimes it gives address of Marathon Baking Corporation, Fair Lawn, NJ, (973) 238-1300. There is a Sabrett sign on the building, part of an industrial park. Don't know if it is a warehouse or a bakery. Never smelled any bread baking there, however, but I always passed by on weekends.
