Burnt Ends, Continued

I moved this over here so as not to hijackbillyboy's thread. quote:Originally posted by RibDog Burnt ends were originally started from beef and come from the point or nose of a packer or whole brisket. Places like Arthur Bryant's in KC use to give them away before realising that they could charge for them. They use to stick them on a plate or in a pan by the order window and people could help themselves as they waited in line for their order. Don't know where pork burnt ends would have come from but beef burnt ends are the original burnt ends. John Maybe it's a new thing? Jack Stack pork burnt ends: And even further from the brisket origins, their ham burnt ends: You probably don't even want to think about Hawaiian Spam burnt ends:

I heard that more Spam is sold in Hawaii than in any other state. Actually, I think those Spam ends look fantastic.

If you ever go to Mother's in NOLA for breakfast and get there early enough before they run out, be sure to try what they call their Black Ham which is the "burnt ends" from their baked ham. Delicious! pb

I don't care for burnt ends either. I like the moist meat that its supposed to be. And another thing - I don't understand why in Heavens name some people prefer less cheese in pizza but love a burnt crust !!!!!!!! Heck - I've had my share too and im baffled by their choice.

quote:Originally posted by MikeS. Ya'all can have my share of burnt ends. I just don't care for anything burnt. Burnt ends originated at Arthur Bryant's in KC and they are beef. Anything else is kind of like sliders that don't come from White Castle. Gate's BBQ in KC doesn't serve burnt ends because "We don't burn our meat".
