I cannot seem to find recipes for icecream cakes online or how to make it them. I am pretty sure it's simple but just need to know the basics.

I like to use crushed oreos (with melted butter) spread evenly across the bottom of a baking pan, then slice up half gallon of (insert favorite ice cream here) the sprinkle with leftover crumbs. crushed Chips Ahoy work well too. Of course that's not a commercial recipe but, Simple works for me.

Yashadi, Here's a link to a recipe for the best ice cream cake you can imagine: www.supervalupaducah.com. In the Advanced Recipe Search, find the Italian section, then choose Sicily as your region with dessert as your search topic. There you will find a recipe entitled "Cassata 'i Gelatu a Siciliana". This is an even more elaborate version of the ricotta-filled cake of the same name, and is actually considered by some to be a precursor to Spumone. Enjoy!!!!
