I've created a Chicago Bagel Dog, that can be made and sold from a cart. I've been making them for myself for years, but never marketed them to the public. My students at Hot Dog University have made them during their internship and loved them. Here's the recipe:

Take an 8/1 natural casing Vienna Beef hot dog and place it in a steamed poppy seed bun. Roll it tightly in waxed paper until the bun is completely flatted to the dog. Serve it plain or dip in mustard. No room for condiments on this creation. My favorite version has Philly soft cream cheese on the bun first, add the dog, and roll it. Tastes exactly like a fresh bagel dog without the doughiness associated with a bagel. The hot soft rolled bun along with the snap of a natural casing is perfection. John Fox would love one of these plain.

    I was really hoping the B stood for Bacon. But, this is good, too.

      That's another creation of mine. I prepared one of these at the Wiener & Still Champion in Evanston, last year while on the Vienna Tour D' Beef. Here's the recipe:

      1. Wrap bacon around an 8/1 Vienna Beef natural casing hot dog, using a tooth pick to hold the bacon to the dog
      2. Drop the wrapped dog in a deep fryer for 2-3 minutes
      3. After frying, shake excess grease from the dog and remove the tooth pick
      4. Place the wrapped dog in a steamed poppy seed bun
      5. Cover the wrapped dog with melted Merkt's cheddar cheese
      6. Enjoy my version of the Chicago Francheezie

          I personally sampled CSD's version at Weiner and Still champion and it was mighty fine!

                    We'll be at the Stein Garden & Gifts Store in Kenosha on Green Bay Road (HWY31). The store is located approximately 6 blocks north of HWY 50 on the west side of the street, one store north of Lowes.
