Cajun red beans & rice

Yep thems pickled coctail onions in my plate (its a cajun thing)
you smash wit yer fork & eat the bits wit the beans. the rice is buried under them bean, trust me

Camellia's Famous Red Bean Recipe:
1 lb. Camellia Red Kidneys
1/2 lb. ham or seasoning meat (I use Tasso)
1lb smoked sausge
8-10 cups water
1 onion, chopped
1 toe garlic, chopped
2 Tbs. celery, chopped
2 Tbs. parsley, chopped
1 large bay leaf
Salt to taste
Cooking Directions:
Rinse and sort beans. Render meat in skillet. Remove meat and place on side. Saute in fat in skillet, onion, garlic, parsley and celery. Add these with meat, bay leaf, salt and pepper to beans. Boil gently, stirring occasionally for about 1 1/2 hours, or until tender. Add water while cooking if necessary.
Serve over hot white rice add hot sauce if desired

    You used "Savoie's Tasso" in your beans, I see. I would love to score a few pounds of that to cook with, and may just drive to Louisiana to get it. I've seen some good sounding recipes for it online and should try making some myself. Your recipe sounds very good.

    If come git you some buy at least 10lbs its only about $3.00lb & freezes well
    They make a turkey tasso too so pay attention

    If I come that far to get Tasso you can bet I'll bring back some for the other cooks around here, as well as some andouille sausage and boudin. They sell for premium prices here. Every now and then someone will make a run down there for a cooler full of boudin.
    About ten years ago I got tired of not having a good source of boudin blanc locally. I made some and gave some to a Cajun chef who ran a cafeteria in Houston. He asked if I'd sell him some more and the next week I bought a Hobart grinder and went into the business part time. There's a lot of work to it, or I'd still be making that.

    I got correct myself Savoies tasso is sold in a 8oz pac for about $3.99. also dickestep on another forum a member from the Dallas area posted buying tasso localy, I don't rember what brand it was. Its not hard to a good pot of beans the main thin is a good smokey season meat & don't burn em I also add green bell peppers to mine as well as additional garlic. The recipe I posted is from Camellias site

    Tasso Recipe

    1 (8 pound) boneless pork shoulder
    5 tablespoons ground cayenne
    3 tablespoons white pepper
    2 tablespoons ground cinnamon
    5 tablespoons kosher salt
    3 tablespoons cracked black pepper
    2 tablespoons sweet paprika
    2 tablespoons chopped garlic

    METHOD

    Trim the pork of excess fat and cut into 1 inch thick by 4-inch long strips. Combine the seasoning ingredients and place in a shallow pan. Roll each pork strip in the seasoning and place on a wire rack. Cover with plastic wrap and refrigerate overnight, or up to 2 days.

    Smoke the pork strips over pecan wood in a covered grill or smoker for 5 - 7 hours, or until pork reaches an internal temperature of 160°F. Cool completely and refrigerate.

    Thanks, 007. Yes, it seems around $8.00 a pound is the going rate for andouille, too. Considering the smoking time and shrinkage that is probably a good price. I may ask some friends who're into BBQ about going in together and doing a six months supply. It would not be that difficult to do while they're cooking briskets, ribs, and chicken.

    Yeppers, but a good andouille does add smething more to Cajun dishes than regular kielbasa, and I'd love to try some good Tasso in a pot of pinto beans or blackeyed peas. I may have to scrub off the old Hobart grinder and get back to making some sausage.

    Come on yall no whining, I paid $12.99lb for Louisiana crawfish tails about 3 weeks ago & I live in Baton Rouge. The price is now down to $8.99 & will get down to about $5.99 at peak season. Remember theya re seasonal so check back at that site in a week or two you can add weight to your order by buying some sausage or boudin
