The cantaloupes in the stores are really soft and sweet now, so I took advantage and made a healthy summer salad, recipe I was given years ago, that went well with Superbowl Sunday's Philly Cheesesteaks. Lots of juice come out of the cantaloupe, so you should mix the dressing in right before serving.
1 bag of baby green salad mix
1 cantaloupe cut up small cubes
1 cup cashews, halves and pieces
12 slices crisp bacon (ready made boxed ok, just heat up) chopped
Dressing: 1/4 cup honey, 1/4 cup red wine vinegar, 1/4 cup canola oil
Mix dressing in right before serving, toss well. Very refreshing and good!
