I love it with it with pineapple, raisins, and pecans, can't say I've tried it with coconut, but sounds good.

I've tried the stuff but didn't care for it. And I agree with TTM - vegetables and dessert don't mix.

I like carrot cake too but hold the coconut for me and chuck a few walnuts in instead, has to have a nice sweet cream cheese icing too!

My Mom has always made it with black walnuts and frosted with black walnut cream cheese icing-she doesn't use coconit or pineapple inhers. Its a family favorite
