Cater Truck Mfg Hot water heater

I bought an 86 Catering truck , manufactured by Cater Truck.
I forgot to ask about the hot water heater.. I think its intregated with the steam table... Anyone know how this works..

I suggesting contacting the manufacture for details, then see if someone had modified or changed to the setup over the last 25 years; as I sure the hot-water heater has been changed. ...???...

After looking at it today, the water tank is mounted up high at the back, and runs into an area of the steam table and then to the faucets...

it might be gravity fed then, some HD want water under pressure
