Catfish Northern Mississippi? Sat, 04/25/09 5:37 PM (permalink)
Family has a plan to treat me to a real Catfish dining experience tonight.I have been living on the west coast for many, many years. This will be my first really non-frozen catfish in a long time.
The question is about the cooking oil.If I recall California doesn't fry in transfat oil or something like that?
I just maybe totally confused.Could someone please explain about non-transfat and transfat oil?
I am going to eat catfish till I pop any which way.
Hope my question is understandable.

Cant explain the oil very well. But I will recommend highly Taylor Grocery in Taylor outside of Oxford, Mississippi for a superb catfish experience. And wild catfish is sometimes muddier but in my opinion almost always more flavorable than pond raised.

Thanks for the info.Hopefully I'll get over to Arkabutla or Sardis to try to get a wild catfish or two.I'm between Olive Branch and Holly Springs.
Chatterbox in Inrams Mill,MS was so good there is no way to explain as I just do not have the words.
Fresh everything! The place is only open five hours a day.You can see the kitchen.Deserts baked on site.
Family owned and operated.Very good service.
Will pass it on if a better place is found.

You're also near The Catfish Hotel. It's next to Shiloh, so you can have a side of history with your fish.  It's about 20 miles north of Corinth, and the catfish is superb.

I'll recommend The Friendship House in northern Mississippi between Aberdeen and Amory just off Coontail Road. The address is 20025 Doss Drive, Aberdeen, MS. [ I think they take reservations. I don't think you'd be disappointed; have the whole fried catfish and the sweet tea.  :)

Taylor Grocery prices have gone up and is no longer worth the drive.  The catfish seem to be getting smaller and smaller as well, and if you order "All you can eat" expect an attitude from the owner if you want a 2nd plate.

what i CAN say about oil and catfish is this---the best oil for cooking catfish is PEANUT oil!---it gets really hot woithout burning and thus---when you fry in it it seals the fish wuick and doesnt soak into it so whether its trans or not--you wont be eating it--just catfish! Done right --you can eat that catfish with your hands and not need a napkin!  so get a pole!!! and a some good hot peanut oil and go for it--not sure where to get cooked catfish around there---but i KNOW the locals will know where to get them live! Happy feasting!

I don't know a thing about transfat oils, but my guess with the volume of frying being done - these restaurants are using cottonseed, canola, or peanut oil as Tiki mentioned.
