 Changing out the water

Hi all. Been reading here for a few months and bought a used cart this week. We tried it out yesterday and everything worked out great.
Here is my question: After a couple of hours and cooking 6 dogs, the water was already pretty greasy. Do you change out the water during the day or just at the end of the day? It seems like you would need 20-30 minutes to change out the water and get the new water hot. That is way too long for a customer to wait.
I'm sure I will have many more questions in the coming months. Thanks in advance.

      The water will look funky after a little while but it's normal. I just Keep the water in the pan.

      You will hear alot of people refering to NY street dogs as dirty water dogs.

        Touch the surface of the water with the edge of a clean paper towel and it wick up a lot of those grease bubbles.

          Sad but true, the grease and fat is one of the greatest flavors there is.

              Every hot dog has some sort of residual grease..Never met one that didnt...

                And that is why they are called "dirty water dogs" And boy oh boy they are tasteee!! That is like throwing out the liquid you cookd the corned beef in to cook the cabbage/potatoes. NEVER NEVER NEVER
