Actually, what I have always read is that a thick marinade does not do much for a piece of meat. The problem is that it is too thick to really penetrate. Probably more liquid should have been added to this recipe.

Skirt steak has become my preferred cut of beef. Always tender, takes a marinade well. It is usually more pricey than other cuts, but I'd rather save my pennies and have skirt steak once than most other cuts twice. I agree about rinsing off any thick or pasty marinades. I made the mistake of not doing so recently...just scraping off what I could, and I wound up with a burnt crust even when cooking at a fairly low heat. John...gotta keep some of these on hand for some folks around here...

Tony, Giving an opinion and telling what one has read is not sour grapes. I thought that we could discuss here on Roadfood without anyone getting bent out of shape. If a person cannot be questioned on why they did something a certain way, perhaps they should not be posting. And I am not saying that John A has been anything but polite. The fact that he did something that some posters thought was curious was the reason for questions. There was no malice intended no sour grapes involved. People are allowed to both quesrion and to learn on Roadfood.

Greymo If a person cannot be questioned on why they did something a certain way, perhaps they should not be posting. I guess I question the way some choose to question. When I think question, I think... Now it seems to me that some others see "questioning" more like... I'm not trying to cause trouble or anything, just offering my opinion. Greymo Tony, you are a wonderful moderator and to be commended for not showing partiality Hey that is really funny, and thanks for the sincere compliment. Some time I'll have to show you the short list of the folks who generate the most complaints from other posters, and are at the center of a higher percentage of messes that require moderator intervention than anyone else, yet somehow are still allowed to post here. Maybe ironic is more accurate than funny.

I am just reporting the facts that are before me. Frankly I am pretty tired of getting called to do a "clean up in aisle 7" and finding the same faces standing around the broken pickle jars. Apparenetly my ability to recognize an indisputable pattern to things makes me seem less than objective. Sorry, it's just that when you are asked to shovel a lot of manure you begin to deveop a keen sense of where it comes from.

that looks absolutely amazing; cooked to the proper temperature, and served with a outstanding lookin' salad as well. Grilled meat and a great italian salad like you've made, John, is probably one of my favorite meals.... keep up the good work...

Feelin' persecuted? actually, no. that comment was tongue in cheek. I don't believe I'm one of those people. Since the change over to the new system, I haven't been around as much. So, it would be hard for me to be a regular problem at this point. But, if you do have a problem with any of my posts, we do have the private message option now that you can use to let me know someone is really upset at me. Or, that person can let me knwo privately that I've hurt them. I'm pretty good at smoothing the waters in a private conversation.
