Chicken Casino Royale

We use to sell a lot of these when I cooked at the "Mustard Tree" in Tallahassee. I still make them at home, they are great for company.

Start with fresh boneless, skinless chicken breasts. Marinate in Italian dressing for a least an hour. Pre-cook your favorite bacon until it’s almost done and set-aside. Fire up your grill, charcoal preferred. Dice some green onion, some red and green bell peppers, about a cup each for 8 breasts. Slice or shred some sharp cheddar. Pre-heat the oven to 375 degrees. Grill the chicken breasts until they are almost done. Place the breasts on a sheet pan with a little space between them. Next, you want to put a couple of bacon strips on top of each breast, then put some green onions and some peppers, top with your cheddar and place in the oven…usually about 10-15 minutes. We serve this with red beans and rice and fresh steamed veggies. Haven’t met anyone yet who didn’t love it! You can do the same thing with nice fresh fish filets.

    Sounds great to me Phish! My list of things to cook just gets longer and longer. I might take a shortcut and brown the breasts in a skilett, but better grilled I'm sure though.

    I think that sounds really good. I would omit the green peppers just because I don't care for them much- although I may sub a yellow bell pepper in place of.

    Sounds real tasty, but firing up the grill, oven and stovetop are more steps than I'd care to take at home. This is a going out to eat meal for sure.

    You guy’s gotta live it up a little! It’s not uncommon for me to fire up the smoker, the grill, deep fryer, stove top, oven and even maybe even nuke something all at once. It’s fun to throw out a big spread for your friends which is the best part about food, sharing what you make with your friends.

    You can leave the green bell peppers out if you like, the red bell peppers and green onions have plenty of flavor. You can also cook everything in the oven...cook the bacon and the chicken on the same sheet pan before you put it all together. Don't bother cleaning the pan between cookings...it adds flavor. Just be careful not to overcook.

    Question, how did this get it's name? Casino Roayale was the make beleive casion in a James Bond movie. Oh, no, Peter Sellers, was in this movie, no James. Bond There looks like a remake coming out soon.

    I’m with you PapaJoe8, I’m going to brown them in the bacon fat with some garlic, go from there, and use the same skillet for the oven.

    I'm not sure Papa...I believe Benny Johanson came up with the name when he had the "Mustard Seed".

    Thanks Phish! I wonder how benny came up with th name? Anyway, sounds like a great way to cook chicken or fish. I edited my earlier post. Casino Royal was in a Peter Sellers movie.
