Chicken Kebabs Mexicana


Chicken and veggie skewers marinated in cilantro, lime, and cumin. Serve with rice, salsa, and warm tortillas.

Ingredients

Original recipe makes 4 servings
 
2 tablespoons olive oil
1 teaspoon ground cumin
2 tablespoons chopped fresh cilantro
1 lime, juiced
salt and ground black pepper to taste
10 cherry tomatoes
1 red bell pepper, cut into 1 inch pieces
1 onion, cut into wedges and separated 
1 small zucchini, cut into 1/2-inch slices
2 skinless, boneless chicken breast halves - cut into 1 inch cubes
Directions
  1. In a shallow dish, mix together olive oil, cumin, chopped cilantro, and lime juice. Season with salt and pepper. Add chicken, and mix well. Cover, and refrigerate for at least one hour.
  2. Preheat grill for high heat.
  3. Thread chicken, zucchini, onion, red bell pepper, and tomatoes onto skewers.
  4. Brush grill with oil, and arrange skewers on hot grate. Cook for approximately 10 minutes, or until chicken is cooked through, turning to cook evenly.

    I recently used this below mentioned easy recipe and believe me this one is too delicious....

    Ingredients:
    • 1 pounds - Chicken Breasts
    • 1 whole - Green Bell Pepper
    • 1 whole - Red Bell Pepper
    • 1 whole - Yellow Onion
    • 1 packages - Mushrooms
    • 2 cups - Fresh Pineapple
    Sauce:
    • 1 cups - Ketchup
    • 1/2 cups - Mustard
    • 2 tablespoons - Steak Sauce
    • 1/4 cups - Hot Pepper Sauce
    • 1/4 cups - Pineapple Juice
    • 1/2 cups - Sugar

    Directions:

    Prepare grill. Baste grill rack with cooking oil before placing over fire. Cube chicken into bite size pieces. Cube peppers and onion into bite-size pieces. Leave mushrooms whole. Spear chicken, vegetables and pineapple onto kabob skewers, alternating pieces to give a variety on each. Coat each kabob with sauce (from the recipe below) and cook over medium hot grill about 10-15 minutes or until vegetables are softened and chicken is done.
    Sauce: mix together sauce ingredients in a sauce pan over medium heat. Cook on low heat for 10 minutes. Divide into 2 containers. Use one container of sauce to baste kabobs before and during cooking on grill. Use other container to drizzle sauce over kabobs prior to serving.
