Chicken Salad

I need a sandwich spread and I thought chicken salad would be good. Hope someone can help me.

My Chicken Salad 2 cups left over chicken, cut into small chunks 1 small bag of frozen peppers (red peppers, green peppers, and onion) 1/2 cup real mayo 1 tsp sugar Dash each of salt, pepper, garlic powder Use 1-1/2 cups of the frozen bellpepper and onion mixute. Cut the strips into medium chunks. Add all other ingredients and mix well. I like to pulse mine in the mini chopper to make the salad smoother, but everyone else loves it chunky. Another Chicken Salad: 1 large can white meat chicken (mash up w/fork) 2-3 stalks celery finely sliced 2 green apples peeled and cubed 1/2 cup chopped pecan (Could also add cranberries for this time of year) S&P Mix all w/Mayo to your taste

grate left over chicken, if deep fried add the coating as well, mayo , relish and onions

I make mine like Rick F. except I do add a little finely chopped celery to it. I do chop everything very fine when I am using my chicken salad as a sandwich spread.

Mine is super easy, but good. I just dice up the chicken into smaller pieces, put in lots of miracle whip and dried onion. Sounds simple I know, but it really is good!

Paul, I agree with you about the rotisserie chicken. I just never seem to have one around when I am making chicken salad.

Get ready for the BEST chicken salad recipe ever. This is somewhat complicated, but well worth the trouble. Classic Chicken Salad For the dressing: 1 T sugar 1 t all-purpose flour 1/2 t kosher salt 1/4 t black pepper 1/4 t ground mustard 2 1/2 T cider vinegar 3 T water 1 egg yolk, lightly beaten 1/3 C mayo In a bowl, whisk sugar, flour, salt, pepper, and mustard. Set aside. In a small saucepan, bring vinegar and water to a boil. Slowly and gradually add the boiled mixture to the egg yolk, stirring constantly until it is just warm to the touch. Gradually add the wet mixture to the dry ingredients, whisking constantly. Reduce heat to low and pour the mixture back into the saucepan. Stirring constantly, heat the mixture until thickened, about 3 minutes. Do not allow to boil. Remove from heat, transfer to a bowl and cool thoroughly. When cool, add mayo to mixture and blend well. For the chicken salad: 4 1/2 C diced, cooked chicken breast (cooled) 1/3 C diced celery 1/4 C sour cream 1 1/2 t kosher salt 1/2 t black pepper Dressing to taste and consistency Combine chicken, and remaining ingredients except dressing. When blended, add dressing, and mix to desired consistency.

The had a BBQ on sundays and then took the leftover chicken, IF there was any that wasnt sold, and on Mondays, had a BBQ chicken salad over greens or sammich the next day.. It was pulled off the bones and then mixed just like making regular chix salad.... They sustained quite a bit of damage and flooding from hurricane Wilma and are due to re-open around the middle of December...

My favorite chili at a cook off I recently went to had meat that tasted BBQ'd in it, it didn't win, but it sure was great!
