Chicken Sandwich $13 Hell No!!!!!!!!!

Los Angeles: 8 Fried Chicken Sandwiches We Love | Serious Eats  I looked at these Chicken sandwiches and thought to myself, I could make this for $1 and they are selling them for between $7:50 to $13....

THis is a 4oz Boneless Flat Chicken breast marinated in buttermilk and dredged in a Western Chicken breading, Fried and put on a Kaiser Roll with Mayo, lettuce and Tomato. This sandwich was better than most of the chicken sands I have had in Restaurants, for a $1 how can you go wrong.

    Gee, seems fair to me at those prices. Looks just like the pictures on the McDonald's menu, except for the purple barf on the lettuce.

    The only place on that list that I know of is Honey's Kettle.
     
    I didn't know there was that much interest in fried chicken sandwiches.  I don't have any.

    I don't know how you do that at a profit. At our price of cutlets and 5" buns, paper and food costs probably do put them around a buck or a bit more. We do ours with 2 slices of tomatoes at today's prices, a few rings of red or white onion and leaf romaine or torn lettuce depending if we're doing wraps at the same time with either a slice of sharp cheddar,pepper jack, or swiss cheese made to order and the inside of the rolls toasted.  The cutlets are slightly pounded and brined in a powdered milk/seasoned brine b4 breading. Even our breading isn't inexpensive using a  premium cake flour,starch, and several seasonings to get a perfectly balanced and seasoned  breaded fillet. It all adds up. The standard sauces are either a tarter sauce-like dressing or a honey mustard. If we're doing wraps concurrently, I have a chipotle ranch, mayonnaisa verde/mojo, or a pepper parmesean/romano dressing and several other toppings available. Sometimes we go with an elongated sesame seed roll and use 2 pounded tenderloins instead. Plated with seasoned french fries we're capped at $7 including a desert. That's profitable at that price point. I can't do that at a dollar no way.

    I could not agree more........ I wasn't impressed with any of them and the $13 ones really killed me........

    Depends on the what the market will bear where you are selling.  Most major urban centers can charge more and do.  Lots of people with disposable income or DINKS (double income, no kids).  What will fly in NYC, LA, etc... certainly won't go over in Central NY (where I'm from) or other areas where people may not have the luxury of indulging in such things. 
     
    I imagine you could sell it for $1 but it wouldn't seem like you'd stay in business very long if your costs routinely exceed your profits.  Just my 2 cents.

    BillyBoy, you asked me yesterday " you can make it for a $1, but can you sell it for a $1" my answer was yes, But I wouldn't be in business very long, would I ???............I have no intentions of selling either one of these chicken sands " even though they are exactly the same " for $1.......... The 8 chicken sands on Serious Eats, were nothing but a bunch of hype bull_hit descriptions that may make someone think they are worth up to $13............

    I think we're talking about two different things.  If I go out to eat I know that within the price I pay for a sandwich is included the cost of the ingredients, labor, rent, utilities, etc...all of the costs of running the business.  Whether I agree with their assessments on a particular food or in an article, I've always found the gang at Serious Eats (NY anyway, I don't know about other regions) to be staright shooters and a group that writes about what they love and not to "sell" to anyone. 
    I've paid $26 for a hamburger, $33 for a pizza, $30 for breakfast and two of those three places I would gladly do so again for the atmosphere and quality of food I ate.  I don't know that I'd buy a plane ticket tomorrow to try those chicken sandwiches but I bet if I was in the area one or two might pique my curiosity.

    I agree with you Billy, I have a few food items and restaurants that cost is not a factor. These are more, every now and then experiences and not everyday events. I have restaurants that I go to and never look at the price, doesn't matter, or just tell the Chef what ever he recommends is fine with me. We don't agree about Serious Eats reviews, let's just agree to disagree. .........................

    Speaking of expensive chicken, a friend of mine just sent me this picture while at the store. now I know that this will be a good tasting chicken, but not $22 worth.

    Yep, Gelson's sounds about right for that price. They are nice stores with great meats, but Gelson's is definitely the high-rent district!

    A friend of mine runs a small pastured poultry farm near Ithaca. He & his family hand-slaughter the chickens, and there is are MANY onerous & silly regulations that make it impossible for the small entrepreneur to exist, let alone thrive. Be that as it may, his chickens of that size run to around $20 each. I cannot afford them.
     
    However, the birds are dry-plucked and never immersed in any cooling solution, which commercial birds are. So they do not absorb any water, and are very solid and extremely flavorful. His suggestion is that people might consider eating less meat if they realized the true thermodynamic cost of producing animal protein, but enjoy it to the max the few times they did eat meat.
     
    I.e. cook a chicken once a week, and spread its bounty over the days creatively, in small quantity and for the whole family.
     
    In my experience, be it in India or with the Chinese or the Vietnamese, every bit of the bird  tends to get consumed: the feet, the head, wattles, blood, entrails, neck, skin, every single bony part well chewed and cartilage eaten. Even today, fresh poultry butchers in NYC will routinely pack the blood in a plastic take-away container.
     
    [Our near-ancestors of every ethnic stripe were never squeamish about consuming every part of meat animals [unless there were religious proscriptions]. Most came from impoverished immigrant backgrounds where food security was a priority.]
     
    Gourmet French stews use hare & poultry blood to enrich and thicken the gravy.
     
    Used in these holistic ways, a $20 chicken may work out OK for a family, if we modify our ideas of what "chicken" has come to represent.
     
    That said, I had an aunt who loved to crunch into chicken skulls with utter, ghoulish relish. I could not bear to be at the same table with her!
