 Chicken Skin

How do I keep chicken skin reasonably intact when cutting up chicken ? Brining seems to release the skin as well . I know you can pin it up with wooden toothpicks but they get in way when frying .

    Use a sharp knife when cutting. The more you saw the more the skin pulls away. The sharper the better...........Bill
