Chicken and fruit

I remember a simple recipe friend gave me: take a small chicken (or capon), pour over a can of apricots and bake. Yum.

I'm sure the Germans make chicken w/apples.

Today I passed an Asian retstaruant featuring Hawaiian Chicken (surely w/pineapples)

What other chicken/fruit combos do you recommend?

    I make this one with fresh orange juice.

    HONEY CURRIED CHICKEN

    4 bone-in chicken or boneless chicken breasts or 1 cut up chicken
    1/4 cup melted butter or margarine
    1/4 cup honey
    1/2 cup orange juice
    2 Tbs. prepared mustard
    1/2 tsp. salt
    1 tsp. curry powder
    2 Tbs. dark rum

    Place chicken skin side up in shallow baking dish and preheat oven to 375 degrees. Combine remaining ingredients, stirring well. Pour sauce over chicken. Bake for one hour (45 min. for boneless breasts), basting occasionally with sauce.

    I make a dish called Chicken Mirabella whidh is delicious and has prunes and olives in it.

    NYNM, one could write a whole cookbook on chix and fruits. A chicken is like a blank canvas - one can pair it with anything, just about.

    I've made chicken with apples, mangos, lemons, oranges, limes and pineapple. The western continental europeans have lost of dishes pairing chicken with prunes. Chicken with cherry dishes are a dime a dozen.

    The weirdest thing I could think of is kiwi, but I Googled chicken + kiwi, and got lots of hits.

    I recommend all of it except the kiwi!

    RubyRose, I am going to borrow that. I still have most of a jar of local organic "raw" honey that I have been trying to think of uses for, and that sounds great. What do you like to serve with it?

    I usually serve with a green vegetable like broccoli and plain white or brown rice so I can drizzle some of the cooking sauce over it.

    Greymo, I go by that old adage "If you cannot say something nice do not say anything at all". I glanced at your post with a recipe containing prunes & olives and was going to move on. However, I’m also curious as a cat so I googled it and came up with this - http://allrecipes.com/Recipe/Prune-and-Olive-Chicken/Detail.aspx. After seeing all of the ingredients I have to admit that sounds delicious.

    Thanks to you and Ruby Rose with “Honey Curried Chicken” I now have two more recipes for one of my favorite entrees.

    Raspberry Chipotle sauce on chicken. YUM.

    Or marinated in raspberry vinigrette to grill & then go on top of salads. It stains the outside of the chicken hot pink, but it's sooo goood.

    That's right - what about all those pepper jellies? I've bought a few varieties in NM. Blackberry Habanero, Orange Marmelaide Habenero, Lime Green Chile, etc. They usually have recipes for glazed grilled chicken.

    For their spring and fall craft fairs, the local Methodist church always makes chicken salad with pineapple, grapes and mandarin oranges in it and serves it with a block of cranberry jello salad. To my taste, it's a perfect pairing of chicken and fruit and one of the members told me that last year, they sold nearly 500 platters of it. (They also sell a chicken-barley-vegetable soup made from the chicken cooking broth.)

    We love Parsi chicken and apricots. I've made chicken with red wine and prunes. Moroccan chicken tagine with dates is wonderful, with couscous and vegetables.

    Chicken and pineapple pizza. I thought it was good.

    I wonder if Puka Dog in Hawaii makes a chicken hot dog. The put all kinds of tropical fruit on those Pukas.

    All of yall's stuff sounds real good.

    Bake a chicken with mango choose and choppped onion, mmm mmmm, off topic, wrap a chicken in tin foil open a beer can shuv it in the center and grill it, mmmm mmmmm basic seasons black peppper, lemon, and whatever other flavors u like

    Take 1 large can of fruit cocktail don't drain.
    Take 1 packet of your favorite Taco Seasoning

    Blenderize
    Turn Oven to 350F

    Place 1 cut up chicken in 9x13 pan.
    Pour cocktail blend over chicken, turn to coat.
    Put in oven for about 1 1/2 hours till done.
    Serve with rice and salad.

    I love those salads with chicken pieces and Mandarin oranges. It's a great combination!

    Hey this sounds good, but I'm confused...
    after "open a can of beer/shuv it in the center" what is where? The chicken in the beer can? The beer poured into the chicken foil? Put the beer can on the grill? Does it explode?
    I would like to try this but please clarify!

    Many years ago--when my wife was going to grad school in SanDiego, ii use to shop in Mexico a lot--one day i bought a HUGE papaya--knowing that there wasa an enzyme in them that is used for meat tenderizer, i decided to cut it half--seed it and put a whole chicken in the middle and put the top back on, and stuff it in the oven. It came out really GOOD---and when i peeled the top papaya half off the the bird it was flat--as the meat had all fallen off the bone and was delightfully sweet. I spooned it out and served it over rice.

    Miami Don- I use your method but instead of beer in the can- I use orange juice- and I also make a paste of OJ, garlic and whatever spices I'm in the mood for- placed under the skin- place on grill, balance precariously,and close the top, ever so gently, and leave it alone for about an hour or so. Delish!

    i've heard of recipes where you pour grape jelly all over a chicken and bake. I like the taste of cold seasoned chicken and a sweet Bosc pear!

    Last night I threw some chicken into my crockpot, poured some riesling on top, a few spices and some dried apricots. Yummy!!!

    Next time I'm trying a few raisins and almonds along with the apricots (maybe prunes). Marekesh Express!
