Most of the time when I go into a authenic Chinese restaurant, there is a particular aroma in the area that is indicative of some type of spice they use. I have tried to identify it but I never have. I thought for a while it was garlic. I think I was wrong. If anyone can list the top three spices used in Chinese cooking, I would appreciate it. Paul E. Smith Knoxville, TN
