HA!  The great debate continues.............. What does your favorite local dog meat man sell? Start there then go try other carts selling different brands of meat. See what you like and what is selling in your area. It is all a matter of personal / regional preference and if your looking to grilling or steaming them.  This debate has been going on here since day one Try looking in the archives here and you will find loads of info.

I suggest the same. Try a local meat supplier.  My local supplier doesn't have a minumum order and I can pick orders up the next day. The next step is natural casing or skinless. I like the natural casing because it gives the snap and they seem to hold better then the skinless. I have only had 1 person request no casing.

The other thing you can do is call some hot dog companies and ask about samples.  I know Vienna gives samples and so does Nathan's.  If you go with a local company, then ask them to supply you with some dogs and find out how they would cook them.

If you are going with a major brand,  you need to get food service hot dogs and not ones sold at the grocery stores....most companies will use a different recipe for their retail dogs than their commercial dogs.

I had tried different brands before deciding on Vienna.  I have my reasons for picking that brand and not just because of the taste.

If you go for a major brand then find out what they will do to help you with your business.  Having a great hot dog to sell is important, but having a company stand by you is equally important.

No way, I would love to talk to you about your Boise experience, I work for Custom Pools on Chinden/Curtis right by Emerald. If you would be so kind as to email me at Hotdogery@gmail.com I would like to ask some questions that are Boise and Nampa related.

Hey Matt, MikeinRi did a taste test when he first started out a few manths ago. Look at his post and what results he found. I agree on Nathans because of brand awarness, all beef good quality. I am starting a Nathans program soon.....................Good luck ................Bill
