You can't get much closer to original roadfood than the trail drive chuckwagon cooking along the cattle drives north to the rail cars in the late 1800's. Perhaps on the "food network" you've seen the wagon cookoff in Ruidoso New Mexico, the largest jackpot purse of all cookoffs............ Rouxdog has been featured in his modest way. Our wagon is in($) this year!

ROUXDOG needs recipe and technique ideas. Here's the catch.......... All cooking must be done in dutch ovens and using wood heat...... Dutch oven cooking, no charcoal briquettes( logs).
We must serve 50 meals of MEAT, BEANS, BREAD, POTATOES, and DESSERT.

      The first thing that comes to my pointed little head when you mention chuckwagon and dutch oven is cornbread.... and since it's happening in NM that cornbread will need a generous ration of diced green chiles. I'd also insist on adding some queso cotija or queso oaxaca. Or both.

      The surface of the dutch oven will need a generous slathering of bacon grease prior to the addition of the batter.

        Michael, come on down yankee cowboy! You aren't too old to learn something!
        Capt. You're onto some good ideas. I did Cornbread our last competition, solid feed back from the 70, much like your thoughts. Yes 70, not just 50 as the rules require. At the last minute we were asked to to prepare more due to a wagon dropout. We come through. Good dutch sourdough biscuits seem to catch the judge's eyes.

              I hope you'll take pictures.  I've never cooked in a dutch oven over an open fire, but I've always been intrigued by people who can do that.

                Bushie, I'm pleased you are intrigued concerning dutch oven cooking. I've been at the method for more than half my life (WE'RE ABOUT THE SAME AGE)and know I'm no expert, I learn from each experience.
                As for the "taking pictures" and posting, great idea! Maybe our wagon team can find someone to do that. I'll work on that.
                This chuckwagon cooking is very challenging as well,as at the end of the day, a very rewarding hands on chance to get a feel for our ancesters.

                  When I think big cast iron pot I think Posole.

                  However the word Chuckwagon never came to mind at the same time.

                      Mar 52, posole is very good. I did a huge pot a few years back for "give away snacks" the day prior to the official event. Went well as a hospitable gesture as folks looked at the historical wagons and all else. Posole isn't one of the items used for the competition or serving the 50 paying meal eaters. Maybe I can find a way to sneak in some hominy? Good thought.
                      Now as for jellybear.......... You dare question we cowboys? Stop and think for a moment. You folks in NC take wonderfully and lovingly prepared  pulled pork and pour VINEGAR all over it at serving time. Now, thats something I don't understand?

                          Sounds delicious, Osso Buco (sp?). We're required to use and serve the items given(see original post). Looks like a delicious recipe for another day. Although there's a few good tips transferable to beef prep.

                            No aluminum foil?   There goes my big fancy idea for potato fans.

                            You get the heavy duty stuff, take raw potatoes, scrub them, then cut them but not all the way through, into slices. Stuff butter & green onions into the slices. wrap up tight in tin & throw on the fire. When the tin foil is black they are done.

                            I guess my mom did get her money's worth out of camp haha but not for your purposes. HAVE FUN!!!!!!

                              OK, no lamb, only beef, yes, you can use RUMP ROAST!!!  Thats a great cut for dutch oven cooking.
                              I hesitate to give you recipes I've never tried, but if you search "dutch oven recipes wood fire" you will find!!!!
