Clam Pizza Recipe

I just got thru making a killer batch of pizza dough and I thought I might give A Clam Pizza a shot.Is there more to it than just clams,garlic,olive oil,red pepper flakes?No cheese?Somebody let me know please!Are canned clams ok?Or is fresh better?

Oregano and Parmigiano Reggiano. I don't know whether Pepe's still uses oregano and parmigiano, but they did when I ate there in the 1940s, 1950s and 1960s. Fresh is always best, but if you don't have them, well, canned clams will have to do.

To die for White Clam pie. For a 12 Inch Pie 1/4 cup Herb Oil (recipe follows) 1 Tbls. Fresh lemon Juice 6 ounces Clams canned ok but not chopped clams 1/2 cup shredded full fat low moisture mozzerella 1/2 cup Freshly grated Pecorino Romano Cheese 1/8 tsp salt 1/8 tsp freshly ground black pepper 2 Tablespoons chooped Italian parsley Combine the oil, lemon juice and stir in the clams to coat. cover and marinate in frige 1 hour Stir together cheeses and spread over crust. Spread the clam mixture over cheese Sprinkle with S&P I do a fairly thin crust and bake on a preheated 450 stone 10-12 minutes I preheat stone for an hour while clams are marinating. Sprinkle with parsley after removing from oven Oil 1 cup olive oil 1 Tbls. dried basil 1 Tbls. dried parsley 1 1/2 tsp. dried oregano 1 1/2 tsp. fresh rosemary leaves 1 1/2 tsp dried thyme 1 Tbls. granulated garlic 1 1/2 tsp. kosher salt 1/8 tsp. black pepper 1/2 tsp. red chilie flakes 1/2 tsp sweet paprika Whisk together all ingredients at let stand at room temp. two hours

Joe, I have no written recipe for My Dough, I just do it by memory if that makes any sense,But its just Flour, Salt,Yeast and water. Check out some of the Pizza sites like Pizzatherapy.com I am having a Pizza Party tonite for some friends and I made the dough days ago ,its resting in the fridge now.

I do add a little Olive Oil to My Dough also and I like to drizzle a little over the top before I bake it.
