 Cleaning fryer?

We just opened a restaurant in southeaster WA.  I've never been involved in the restaurant business, but the rest of my family has.   I read on the forum about cleaning your fryer out with lemon juice.   I did that this last weekend and the tubes came out pretty clean.   How long do you normally boil it for this type of clean out?
