Has anyone tried this?

I can't have real ice cream, and I've found this to be an amazing substitute. I even make milkshakes with it and chocolate soymilk. Outstanding.

I'm stuck with just chocolate, coconut, vanilla bean, and mint chip, as they sweeten some of the other flavors with brown rice syrup or use rice flour, which I can't really have either. That's good enough for me though, as I hadn't had ice cream in well over 15 years until I found this.

Great idea! If Splenda was used, there would be much less carbs.
