Cod and Cabbage my way.

A recipe for two I made this up on the fly tonight. I tend to do that. 2 cod filets 2 pats unsalted butter a nice dollop of Maille Provencal style mustard a small spoon of capers a bit of a spring water as need extra butter as needed Heat butter in a frypan, add fish, sear on both sides, lower the head and add the mustard and capers. Simmer until fish is opaque, add a bit of water to make a light thin sauce, and additional bit of butter in small amounts to thicken it. You can skip the water, and use butter to thicken it slowly, but i did not want the dish to be too heavy. Side dish 2 cups of shredded savoy cabbage, blanched a handful of sliced mushrooms fresh, not canned one small yukon gold potato cut in small dice a shallot finely chopped a bit of butter fleur de sel..it's what i had on hand, but regular sea salt is just as good, and freshly ground mixed peppercorns: pink, white, black and green..it's pretty. Heat the butter in a pan, add shallot till soft, add the potato till it becomes a bit golden, add cabbage and mushrooms, saute, and season with salt and a few shakes of pepper. I had this with a gewurztraminer varietal wine. It makes a nice and quick meal when you get back from work.
