Nothing says comfort food more than a nice meatloaf cooking in the oven, and filling the house with family oriented aromas. Sure brings back memories for me, when my girls were home, and hubby, alive.
Anyway, every so often, like end of last week, I put a nice loaf in. It sure tasted great, though I complained, I believe on another thread, that I make it too moist.
I was going to freeze the slices, individually wrapped in plastic wrap, and placed in zip lock bags. However, I have slowly eaten them, and that says a lot, because I am a small eater.
I like mine with mayo, catsup, raw onion, lettuce, tomato, and a dash of horseradish, on my local market 8 grain bread.
This sandwich, is a died and gone to heaven, type of culinary delight, IMO.
