Condiment question : Relish

So I thought I would save some time and add the relish to the self-serve part of my table along with the mustard and celery salt and (I'm sorry) ketchup (for those who don't know any better). I took a clear 12-oz squirt bottle and snipped off a bigger hole in the top than usual so that the relish chunks could easily squirt through in a controlled manner. Unfortunately, what we got much of the time was all the relish juice squirting out first... then relish. But, it seemed to make a mess. Any suggestions on how to fix this problem, or should I manually add the relish to the dogs like I do with the raw onions? Any help on this is appreciated. Thanks

shake it is riright, but if it is up to your customers, how many fingers will plug the hole while shaking, contaminating the relish? i would do packets, unless its too costly. i have used the heinze bottle before. not a bad choice, just get one, and refill it with your cheaper relish. avail at wallyworld, and a gazillion other retailers.

You can spring for a relish dispencer or go to single serve 2oz paper cups. You have just started, how busy can you be? Dress the barkers yourself to start. If you find that your real busy have a condiment tray handy to put out for self serve. I call that Plan B. I hope you have to go to Plan B often. Chow Jim

We us a condiment tray with onions, relish and hot pepper relish, works great and people like dressing up their dogs, havent had a problem yet. Works great, especially when its really busy, then we put out two, if expecting a crowd.

I was going to say a 1/8th pan that ya fill from a $3.00 or $4.00 gallon jug of relish as needed. Just use a plastic spoon that you can toss at the end of the day. (Just keep the pan on ice for safety reasons).

We got that one at BJ's and used it last year, then got a full plastic one (the stainless can be a pain in the a**.) All is well with both of them though, we felt that letting the customer put on their condiments was better, and its worked out well...

We don't let the customers near our relish. This is because we have a sweet red pepper relish made for us by a sweet old lady from Maine. It costs more than plutonium ($25.00 a gallon) but is one of our signature items...We found it a nice way to set ourselves apart from the crowd....the nice lady has a commercial operation at her home and normally sells the product home-canned and inspected by the State of Maine at $6.00 per pint.

In Charlotte, self-serve condiments are prohibited, although I see this rule being bent. Just some thoughts I heard from others that tried self-serve condiments. A lot of people are pigs and will pile on anything that is free. On the first bite, half the condiments hit the pavement and that's your money landing there. It's especially tough if you sell Chicago-style with tomatoes and see 2 of the 5 they put on fall off to the ground.

I'm just curious Jimeats. Why don't you think someone could be busy right when they start. My second Saturday I was open I did over 2k. It's all about location, as they say. By the way, I'm all about the condiment tray for relish (dill and sweet) and I put my onions in the middle tray). It works great. I guess I went to Plan B right out of the gates. Stang
