      He'll be cooking a Stew made from a Pre-Historic Bulldog found only in a Region East of present day Atlanta and a Pre-Historic Alligator from the Swamp Region of FL.

        I think those are sly references to the "local" college football teams, and not an ethnic joke.

          You can also see similar cooking demostrations at Jamestown Settlement.
          There is a special event yearly at Thanksgiving (start planning for next year) called  "Foods and Feasts" that focuses on food preservation and preparation by the Powhatan Indians and the English colonists.
