Cooking Oils

Do you use different oils for different things when cooking?

I used to use peanut oil for Chinese cooking, corn oil or lard for Mexican cooking, Oil Oil for Italian and a lot of other cooking dishes but now it's just vegetable oil and olive oil.

I have a few different olive oils, one specifically for dippping and the others for cooking.

My cupboard space is more important than being oil specific.

Nope.  I use mostly Olive or Vegetable oil for everything.  I used to use shortening.  I never use lard.
