A couple of things that you may want to try is after cutting Russet Potatoes drop in cold water until ready for use. I agree with the double cooking method, that it is the best, however, I had a friend that cooks thin potato chips (wing chips) he sells with wings that the secret is washing the cut potatoes 3 times with cold water to rid as much of the starch as possible. Also try using Lawrys Seasoned salt to season with.
