Cooking raw fries

A couple of things that you may want to try is after cutting Russet Potatoes drop in cold water until ready for use. I agree with the double cooking method, that it is the best, however, I had a friend that cooks thin potato chips (wing chips) he sells with wings that the secret is washing the cut potatoes 3 times with cold water to rid as much of the starch as possible. Also try using Lawrys Seasoned salt to season with.

    We always fried our fresh cut potatoes twice, but on a recent Diners, Drive-in's and Dives, this place fried them once and they looked great. They said the trick was putting some vinegar in the water and refrigerating the raw potatoes for several days to keep them crisp..Boy, it might be worth a try because the double frying technique is a pain in the butt. And it ruins your frying oil much faster.

    I don't know about adding it to raw fries, but vinegar is the only condiment I use when eating fried fries.

    Vinegar is an acid, keeping the spuds from turning brown. Vinegar also keeps temperatures of products colder, it is also a preservative That's all I can think of.

    I've tried placing raw fries in cold oil and turning the oil up to high and letting them cook that way vs the double cooking method. I like the double cooking method better, but it is a pain in the butt.
