Corn Bread

Is it possible to make Corn Bread with out using any other grain?

    I do not believe it would be corn bread then

    Sweet Milk Cornbread (without Flour)
    • 2 cups yellow cornmeal
    • 1-1/2 teaspoons baking powder
    • 1 teaspoon salt
    • 1 egg, lightly beaten
    • 1-1/2 cups milk
    • 2 tablespoons melted shortening or vegetable oil
    Preheat oven to 450°F.

    Combine the cornmeal, baking powder and salt, and set aside.

    Stir together the egg, milk and vegetable oil. Combine cornmeal mixture with milk mixture, stirring just enough to moisten. Pour into hot, well-greased 9- or 10-inch skillet or pan, muffin tin or cornstick mold.

    Bake 12 to 15 minutes for muffins or cornsticks, and 18 to 20 minutes for pan or skillet. Cornbread will begin to pull away from sides of pan. Makes approximately 12 muffins, cornsticks or pieces.

    Pan de Elote

     8 each Fresh Ears of Corn (medium size)
    4 each Medium Fresh Eggs
    5 oz Unsalted Butter (melted)
    ½ tsp Baking Powder
    14 oz Sweetened Condensed Milk
    1 tsp Ground Cinnamon 
      
    Remove all whole kernels from each corn with a knife
     
    Combine with remaining ingredients and process until smooth
     
    Bake in 4 oz muffin silicon molds.    Only fill each mold up to the half.
     
    Bake at 350 F for 25 or 30 minutes to a light dark color.
     
    Allow to rest in the molds for a few minutes before unmolding.
    If warm, serve with ice cream or chilled with a cup of hot chocolate.

    Thy this for a small amount:

        1 cup plain white cornmeal
        1/2 t soda    
        2 t baking powder
        1 t sugar
        2 eggs
        1/2 cup buttermilk
    Mix dry ingredients. Add wet and stir well. (My mother's cook used to say "The more you beat the better it eat)
    Pour into heated greased iron skillett. Bake at 425 until light brown.
     
    This is the recipe I learned after being diagnosed Celiac. It really is good. I keep the dry ingredients mixed up in a plastic container so I can make cornbread in a hurry.

    I love Gladiola Mexican Cornbread. Just add some canned corn and chopped pickled jalapenos... and bake in a cast iron skillet. It's great w/ some good homemade pintos and ham!
