Thy this for a small amount:
1 cup plain white cornmeal
1/2 t soda
2 t baking powder
1 t sugar
1/2 cup buttermilk
Mix dry ingredients. Add wet and stir well. (My mother's cook used to say "The more you beat the better it eat)
Pour into heated greased iron skillett. Bake at 425 until light brown.
This is the recipe I learned after being diagnosed Celiac. It really is good. I keep the dry ingredients mixed up in a plastic container so I can make cornbread in a hurry.
