Cottage Cheese Scramble

Ingredients: 1/3 cup instant nonfat dry milk 1/4 cup water 3 eggs 1/2 cup cottage cheese 1/2 tsp salt - dash of pepper 2 Tbsp butter 1 Tbsp chopped chives Servings: 3 Instructions: Blend together nonfat dry milk, water, eggs, cottage cheese, salt, pepper and chives. In medium- size skillet melt butter; when hot, add egg mixture and cook over low heat until set. Serve immediately. -roadtripxx-

I dont eat eggs, but the cottage cheese did spark my attention.

I was intrigued. I dropped the powdered milk, and the chives, added green onions, a dash of Lea and Perrins, and some hot sauce, and it was pretty good

i got rid of the dried milk and eggs, used tofu instead and it was great
