Crab Soup or She Crab Soup...what are the flavour differences

Not sure if has been posted before, but I cannot find the thread for it. I was looking at recipes yesterday for crab soup. Some just listed crab, others listed she crab (obviously would include roe), but i am wondering if there is a flavour difference. It seems there would be. Not tried it yet. Not sure I have seen she-crab being sold in the seafood section of the grocery store either.

Any experiences with this regarding flavour, preferences, etc.?

In New Jersey it is illegal to keep a sponge crab (a sookie with roe)
They must be immediately returned to the water.

For one thing She Crab Soup has crumbled Bacon on top of it or stirred in, also a jigger or two of Crème Sherry to finish, I also give mine a dollop of Lobster base, makes a delicious difference, IMHO!

Thanks for responses and suggestions.
I looked at several recipes and all asked for Sherry, not I did not find any for Creme Sherry.  Nor were any of my recipes asking for crumbled bacon on top of a She Crab Soup.

Though you have me curious, chewingthefat, what is Lobster base?

I guess I am interested in know if there is a significant flavour difference between the two.

ChrisOC--i have heard of that and can see why they would do it.

I used Harvey's Bristol Cream Sherry and a spoonful of the lobster base, per chewingthefat's recommendation when I made cream of crab soup and it made a HUGE difference!!

In James Michner's iconic novel "Chesapeake", a Black Deckhand who also doubles as the Cook, on a certain Skipjack, always finished his She Crab Soup with crumbeled Bacon, the idea always stuck with me as Michner always did exhaustive research on everything he wrote about. Besides, it's Bacon, how can it screw ANYTHING up!

There was a lengthy discusion about this a while back.  I've always thought of she crab soup as a regional dish maybe originating in Charleston and dating back a couple hundred years.  Female crabs were favored because their roe helped flavor, and gave the soup it's distinctive color.  But like ChrisOC mentioned, today - female crabs with their eggs visibly showing have to be returned.  In our area we make crab bisque which is very similar.

Laughing so hard it hurts..chewingthefat--how can bacon hurt anything? True!!!

@Michael Hoffman -- Ah...that is what it is. Not sure if it is a Canadian or British thing..i have always referred to them as boullilion cubes/powder. Thanks for that.

Your flavour suggestions are very good, chewingthefat.

Thanks lleechef. I happen to have both dry sherry and creme sherry. One is for my cooking needs, and latter despite what my friend say, I like to enjoy as an after dinner drink. They call it the street drunks drink. I like a Gin and Tonic. My best friend said that was dubbed "Mother's Ruin".

I have to make the soup, but alas as BelleReve and Chris pointed out, it is illegal to get such crabs...explains why i do not see them in the grocery store!

FWIW, I just returned from a week in the Chesapeake Bay area of Virginia, had she crab soup 4 times at 4 different eateries during this period, and can say with certainty that there was no bacon in any of them

I've never had She Crab Soup with bacon, either.

It's my favorite restaurant soup.

well, this means (to me) that bacon is not necessarily an "always included" ingredient in she crab soup

It's not, I just happend to read a very old recipe from the Novel "Chesapeake" and tried it out. When I fix it at home I use the Bacon, I don't at my restaurant due to cost.

analei - When eating boiled blue crabs, you can sometimes find eggs in the cavity.  It's a semi-soft yellow-orange substance about the color of an egg yolk.

I don't know enough about their anatomy, but would guess their eggs begin inside and extend under their apron, where they are very visible when caught live.  Maybe some females whose eggs haven't developed enought to show on the outside are caught and kept.

Just buy female crabs and hope you find some eggs, with all the great ingredients, the soup will be delicious either way.

ah, well, you seemed to be saying it is a required ingredient when (earlier in this thread ) you stated "For one thing She Crab Soup has crumbled Bacon on top of it or stirred in"......so I added my comment to indicate that it doesn't appear to be a required ingredient in my (limited) experience

In any case: no harm, no foul, no problem
