If you have never had Cornell, Brooks or Statefair Chicken you need to try his recipe below.


CORNELL BARBECUE SAUCE
(enough for 10 halves)

1 cup cooking oil
1 pint cider vinegar
3 Tablespoons salt
(Adjust quantity or eliminate to meet individual health needs and taste.
BBQ chicken basted frequently during cooking
will be saltier than chicken that has been lightly basted.)
1 Tablespoon poultry seasoning
1/2 teaspoon pepper
1 egg

Beat the egg, then add the oil and beat again.
Add other ingredients and stir.
Brush sauce on the broiler halves every few minutes during cooking.

The recipe can be varied to suit individual tastes.

Leftover sauce can be stored in a glass jar in the refrigerator for several weeks.

    Me either...Through this single recipe this man has brought a lot of joy, great meals, and funds for local fire departments churches and rescue squads throughout Central New York.

    I have already had my first whiff of the white smoke of the Homer Fire Department chicken barbeque. The smell of this chicken cooking over charcoal has defined summer for many thousands of people.

      I had my first taste of Cornell Chicken at a firehouse bbq in Niles, NY. It's about 20 miles north of Homer near Skaneateles Lake. I live near Albany but have several friends near Skane. And when I travel on 88 I always try to hit Brooks BBQ for their Cornell style chix.

      Good stuff.
