 Cucumber Salad

Hi everyone :)

I have been making a cucumber salad of cukes, vinegar and sugar (splenda now) for years. While I like it, I need to make a cold cucumber salad for a party on 6.23 and thought that some of you wonderful people could provide me with some different recipes.

    My family loves this.

    Fruit & Veggie Salad

    Mix the sauce to taste. I eyeball according to how much veggies I have. De-seed and core the cucumbers.

    cucumbers(diced, seeds removed)
    tomatoes(cherry or grape, halved or quartered)
    green peppers(diced)
    Granny Smith apples(diced)
    red grapes(halved)
    Add a equal mixture of ranch dressing and Hellman's mayo
    (crumble in some blue or feta cheese if you like)
    to that add to taste:
    rice vinegar
    salt
    fresh ground blk. pepper
    granulated garlic(easy on this)
    dill weed

    Mix all sauce and dry ingredients together and add to veggie/fruit mix and let sit a couple hrs.

      Hi one of my family's favorite is sliced cucumbers,sliced red onion,fresh dill sea salt and a grind of fresh black pepper. I dress it with sour cream or just plain apple cider vinegar and a good olive oil. Actually you can use just about any kind of vinegar that you like. My husband really likes the sour cream version.         cukes (sliced thin)
        green onions or scallions
        tomato
        chopped fresh cilantro
        salt, pepper, some green goddess dressing and a bit of sour cream
        let chill together for a while before serving

          Hungarian Cucumber Salad
          Serves: 8 - 10

          2 lrg. waxed cucumbers - sliced thin
          2 tsp. salt
          3 Tbls. apple cider vinegar OR distilled white vinegar
          1 1/2 tsp. granulated sugar
          1/4 tsp. paprika
          1/4 tsp. white pepper
          1 clove garlic - minced
          1 med. white onion - chopped
          1 cup sour cream - low-fat okay, optional
          paprika - for garnish

          -Sprinkle cucumber slices with salt, stir to coat, and refrigerate for 1 hour.
          -Mix vinegar, sugar, paprika, white pepper, and garlic; set aside.
          -Squeeze liquid from cucumbers and discard liquid.
          -Fold vinegar mixture, onions, and sour cream into cucumbers.
          -Sprinkle additional paprika over top and refrigerate for 1 - 2 hours.

            This is something right up my alley.
            I have been making a recipe similar to this for a long time, only with thin sliced onions and not green ones.
            I love a cuke salad and the addition of cilantro really caught my eye!
            Thanks... I just might make one today, as I am my way to the store!

              Mamaw Smith does the cucumber salad each spring with fresh cucumbers out of the garden, macaronni, mayo, egg, a little of onion and pepper and that is it. She lets it frige for a day and have at it.

              It is always the first cucumbers out of the garden.

                  CUCUMBER SALAD

                 6 large cucumbers peeled cut length wise and seeded then sliced

                 1 large red onion sliced on the vertical
                 
                 1 cup or red wine vinegar

                 3 cups of water

                 3 TBS. sea salt

                 fresh ground black pepper to taste

                 the zest of two lemons and the juice of said lemons

                 1 bunch of fresh dill chopped fine

                 2 TBS. superfine sugar

                 1/2 cup sour cream

                 1/2 cup mayonnaise

                  First, combine the vinegar, water, salt, 1/2 of the dill and 1/2 of the lemon zest.
                  Let this marinate for about four hours. Strain the mixture and let stand in the collander for about an hour so that all of the juice is gone. Combine all of the rest of the ingredients and then add the cucumbers. Let this sit in the refrigerator over night.

                  This side dish pairs well with all fish but with smoked salmon especially well.

                    Mexican Cucumber Salad

                   2 large cucumbers peeled and sliced thin
                   Fresh squeezed lime juice
                   Cayenne pepper to taste or chile powder to taste if you like it mild
                   salt and pepper to taste

                  Marinate the ingredients for one or two hours and serve with fish tacos, carne asada tacos, carnitas, or just fresh grilled fish. This is a nice refreshing, simple dish that is more than the sum of its parts.

                    just like my grandmother used to make except that the onion has to be very finely minced, not chopped......
                     
                     also, additional sour cream goes on top of each portion when served :)
                     
                     in hungary, salad is served with the main course, not before... cucumber salad goes very well with spicy goulash or sausage :)

                      The staple cucumber salad in our Greek household in the summer:

                      Slice or dice as many peeled cucumbers as needed - in my family, that means 3; for a party, depending on how big it is, maybe 10?
                      Slice or dice at least 6 tomatoes (3, if it's just your family)
                      Fresh chopped parsley
                      1 small banana pepper, finely diced (seeded)
                      Feta cheese, crumbled or sliced

                      Toss everything together with olive oil, lemon juice, and salt
                      Serve with fresh, crusty bread (for dipping in the divine oil left over from the salad)

                        Thai cucumber salad has salt and splenda or sugar added to some boiling water and poured over sliced cucumbers, sliced hot peppers, sliced onion, diced cilantro and some ground up peanuts.

                          You all are making me hungry, be glad when some garden cukes become available.   It's been awhile, since they are 79c to 99cents a peice in the store.

                          No sugar for me, I like mine with straight cider vinegar and salt/pepper.

                              Besides some of the delicious recipes mentioned previously, here's two other of my favorites:

                              I like to use pickling cukes when available - skin & all.
                              -Approx. 8 pickling cukes cut into pieces
                              -two or more cups of chilled mung bean sprouts
                              -sprinkle with salt and rest mixture in fridge for an hour or so, drain.
                              -add black pepper, crushed red pepper flakes to taste and some minced garlic
                              -add some sushi vinegar and a bit of sesame oil
                              Toss and enjoy!

                              Another favorite:

                              A bunch of cut up pickling cukes, fresh cut tomatoes, sweet onion, fresh parsley.
                              Combine all and add a can of filet of anchovies, cut up with all the oil from the can.
                              Black pepper. Mix and enjoy!

                                  i like the following:

                                  sliced cucumbers (skinned or not, your choice)
                                  sliced onion (vidalia or some other sweet type is best)
                                  mayo (real, not dressing)
                                  garlic powder
                                  dill weed

                                  i slice the cukes and onion to the same thickness (not too thick or too thin) and then mix in a tablespoon or two of mayo, shake on lots of garlic powder and throw in some dill weed.  allow to sit in fridge for at least a half hour.  mix and taste and then add more garlic, dill or mayo - as per your tastes.

                                     Japanese cucumber salad (Namasu)

                                    Ingredients:
                                    2-3 cucumbers
                                    1 Small red onion sliced thin
                                    1 tablespoon plus 1/4 teaspoon salt
                                    1/4 cup sugar
                                    1/4 cup rice wine vinegar
                                    1 teaspoon fresh grated ginger root
                                     
                                    Prepare the cucumber by slicing them in half. Remove the seeds. Slice in thin diagonals. Sprinkle with the 1 tablespoon of salt place in a bowl and let stand for about 20 minutes. Rinse, drain and squeeze off the excess water. Combine the sugar, vinegar, remaining salt, and ginger and pour over the cucumbers and red onions. Chill for an hour and serve.
