RE: Cucumber Salad
cucumber salad - hungarian style
For the salad you described simply leave out the sour cream (much less fattening) This salad is very tasty either way. I also recomend blanching the onions as sometimes they can be overpowering otherwise chop them very fine and add a small amount at a time.
2 lrg. waxed cucumbers - sliced
2 tsp. salt
3 Tbls. apple cider vinegar OR white vinegar
1 1/2 tsp. granulated sugar
1/4 tsp. paprika
1/4 tsp. white pepper
1/2 clove garlic - minced
1 white onion - chopped
1 cup sour cream - low-fat okay
paprika - for garnish
-In a bowl, sprinkle cucumber slices with salt, stir to coat, and chill for 1 hour.
-Mix vinegar, sugar, paprika, white pepper, and garlic; set aside.
-Squeeze liquid from cucumbers, return to bowl, and discard liquid.
-Add vinegar mixture, onions, and sour cream to bowl; stir to coat.
-Sprinkle additional paprika over top.
-Chill for 1-2 hours.
