Dairy Mart Pickled Eggs

When I lived in OH., the Dairy Mart stores used to carry awesome beet pickled eggs. I haven't found a suitable replacement for them, nor a good recipe, here in MI. where I live. Any suggestions?

Red Beet Eggs 1 to 1 1/2 dozen hard-boiled eggs 2 cans red beets - either sliced, cut, or small whole beets 3/4 cup cider vinegar 1-1/4 cup sugar Preparation - Drain the liquid from the beets into a saucepan. Add the vinegar and sugar to the beet juice. Bring to a boil, reduce heat and simmer for about 5 minutes. Place the hard-boiled eggs in a deep bowl or a large wide-mouth jar, layered alternately with the drained beets. Pour the hot, cooked beet juice mixture over the eggs & beets. Cool at room temperature for about 1 hour, then refrigerate. Make red beet eggs at least one day before serving so the eggs absorb the pickled taste and turn a deep red color. When available, use cooked fresh red beets instead of canned beets for extra color and flavor. ********************************************************************************** There ya go, took all but 30 seconds to find this recipe on the web....But there are a ton of retailer's out there that will ship them to your front door.......for a price of course $$$$$$$$$$$$$$$$$$$$$ Love them eggs.... Have you tried the pickled eggs at Meijer? They sell them in the meat section, usually sitting on the divider between bacon and smoked sausages.

Glenn and ohers: this is a true PA Dutch staple for summer picnics. My recipe is very similar. Have enjoyed them since I was a kid. I'm trying to create interest here in the South, but having little success. When I make them now, I'm one of the few who enjoy them, so I usually have a bunch left over for me - but that's OK too.

Here's our family recipe, which uses brown sugar instead of the white. If I eat pickled eggs at a diner or festival, I can always taste whether they were made with brown or white sugar. My grandmother said they used to use brown sugar in anything they could because it was cheaper and save the white sugar for baking. PICKLED EGGS AND RED BEETS 1 (1 lb.) can sliced beets 6 peeled hard-cooked eggs Water 5 Tbsp. cider vinegar 3 packed Tbsp. brown sugar ½ small onion. thinly sliced (optional) Drain juice from the can of beets and place in a two quart jar. Add sugar and vinegar and stir well to dissolve sugar. Add 1 cup of water and stir again. Layer beets, eggs, and onion (if used) into the jar. Fill jar with water, cover, and shake gently to mix. Store in refrigerator for at least a day before eating.

I am sorry, I should have phrased my post better. I have found the pickled eggs in Meijer up here, but they suck! I've found a few various recipes online for them, and tried a few, but not seem to come close to what I liked about the Dairy Mart ones. Thanks for the replies though.
