Deep Fried Pulled Pork at CHUBBY's BBQ

IF any of my pork starts to dry out, i pull it for the baked beans and some i deep fat fry on special request,it's not on the menu. i fry it till it is completely crispy,serve it up with salt,pepper,and some granulated garlic sprinkeled on.I've never had pork cracklings that came close,this is different. ask your local bbq to do you some up.

Carnitas are about as close as I have seen to the item described. They are one of, if not the top, favorite Mexican Style Meat treat I can think of. Chunks of Pork roughly 2-3 inch-square, seasoned a bit and deep-fried until crusty and deep brown. A close second is the crusty outer meat that is often available as a menu item at many BBQ places. When I ask Dennis Hays for some "Bark" or Outside Meat, he serves up several chunk-like pieces of fairly chewy, crusty, and extremly strong smoked flavor Pork !! I think I could make a case for a strong relationship between the two items!

Carnitas are really supposed to be deep fried?! I don't think the place we go to fries it. It's more like pork pot roast. I think we did have it fried one place and it made my husband sick. Of course, keep in mind, I'm in Virginia! Cathy

Signman visited Chubby's BBQ home of Dr Smoke AKA Tom. He has laid to rest all the snarty comments about DrSmoke being a 12 year old locked in a basement somewhere trolling thru web-sites. We may have a variety of opinions of Dr Smoke rangeing from thoughts of marriage, to lynch party invitations, but setting aside all the questions about posting, he does run a business. It is a BBQ restaurant in the location he has discussed and that ought to settle the validity guesses on some members part. Signman called me to describe his experience and says that he will post a review of the day and some photo's when he gets home. Thanks, Howard for helping resolve the "Smoking" issue !

I suppose one gets "a little over the top" as a result of spending so much time pulling pork. Have you ever thought about getting another hobby? Perhaps driving some folks on Roadfood nutty might be something you'd want to consider.

The full review might have to wait until the AM, but you all can go to sleep knowing that both Chubby's and Dr. Smoke are the real deal. Chubby's is worthy of a full write up and feature on this site, and the good doc is dedicated to serving as good a meal as possible. But I did have to bring my own condoms. More tomorrow, and hopefully I can get the photos posted as well.

Dr. Smoke, since the good Signman has not yet posted his review, you can get out ahead of this...did he drop his plate...did he ask for bbq samples? Did the Tabasco bottle disappear and the ball bat come out?

Now that I think about it Doc has a point. My friend that owns a BBQ and dog shack is very over the top. Great guy though. I would love to stop by and try Doc's grub while I'm in IL as its closer than where I am now... but alas, I can't eat that stuff.

Hey Doc.. Will ya mail me some of that fried pulled pork to try, everyone really has me curious now.. especially since I said it sounded gross, still goes, but I gotta try it!.. Just came that way 3 weeks ago, I wish I had seen a previous post about your place before I left the north Feb 26th-- In fact, my overnighter was in Aberdeen, MD.. It would have been a perfect (albeit, minor out of the way) stopover for lunch on the road)- Tara
