Dessert Pizza....

So, what's this I hear about "dessert pizzas?". How are they make? Fruit? Chocolate? Is the dough any different (e.g., more sugar?). What's the "sauce"?

    Most dessert pizza recipes use a sugar cookie crust (usually made from refrigerated cookie dough), but a few use a regular pizza dough. Toppings usually are fruit topped with some sort of a glaze, but chocolate chips and peanut butter show up in some recipes.     I've seen Paula Dean do a dessert pizza that looks pretty tasty. She rolls out a refrigerated sugar cookie to cover a pizza pan, baves for 10 minutes, spreads with cream cheese, tops with assorted fruit and brushes on apricot or orange marmalade.

    So far so good, but these don't really sound like "pizza" to me, esp. with sugar cookie crust. They sound like large tarts using a pizza name to be "cool." But maybe not, I've never eaten one....are they different?
    Maybe the tiramisu one?

    In a way you are correct about them being a variation on a large tart, but there are some differences. A tart generally would have some semblance of vertical sides to hold the fruit, which would be in a sauce of some sort. After filling, usually the tart would then be baked. The dessert pizza is totally flat, with the fruit usually placed individually on the "crust" in some sort of pattern and then topped with a glaze. If something like cream cheese is used as a topping, it is spread on the pre-baked "crust", then topped with the fruit and glaze, and served cold, with no further baking done to the pizza. I am sure the original dessert pizza was probably called a "pizza" to try to get children to eat fruit for dessert. One of the earliest references I can remember for a recipe for dessert pizza was in a Pillsbury refrigerated cookie dough ad to make a dessert pizza for a children's party.     The East of Chicago Pizza chain (mostly Ohio and Indiana) serves dessert pizzas, namely Dutch Crunch and peanut butter and jelly.

    I thought that Pizza Hut used to make a dessert pizza.

    The Valentinos pizza chain used to have dessert pizzas made with fruit toppings at their buffet.

    There's a place in NYC called Pie (on the little-known 4th Avenue, between 12th/13th streets) that cuts to-order sized slices with scissors. Among the pizza types they serve is a chocolate pizza. I was lukewarm about it, but many people like it very much. Purists need not apply.

    In our family, it's any dessert baked in a pizza pan and cut in wedges to serve. Sometimes it's a sort of glazed fresh fruit tart with a cookie crust but most often it's this one that we first made 13 years ago for my daughter's birthday party and manytimes since then.

    (This is too sweet and gooey for adults but kids of all ages will gobble it up.)

    BROWNIE PIZZA

    1 (21.5 oz.) package fudge brownie mix
    2 Tbs. flour
    1/ 3 cup water
    1/ 4 cup vegetable oil
    1 egg
    1 cup miniature marshmallows
    1/ 2 cup M&M’s
    1/ 2 cup unsalted peanuts
    1/ 4 cup caramel ice cream topping

    Heat oven to 350 degrees. Combine brownie mix, flour, water, oil, and egg in mixing bowl. Beat 50 strokes by hand. Pour brownie mix onto a pizza pan and spread out to edges. Bake for 15 to 20 minutes. Immediately after removing from oven, sprinkle with marshmallows, peanuts and M&M’s. Cool for 20 minutes. Drizzle with ice cream topping in a criss-cross design. Cool completely. Cut into wedges to serve. Cover with plastic wrap to store. 12 to 16 servings.

    Thanks for reminding me about "Pie" restaurant. I've been there and it's fun. But never for the chocolate.....

    Pizza Hut in my old part of NY state used their pizza dough, pie filling, and a cinnamon crumb topping... usually they had apple, cherry, or blueberry.

    Oh, yummy! Last time I made one, it was the first thing to dissapear of the buffet.
    I use the Pillsbury sugar cookie, roll out and bake as per the Paula dean recipe.I add a little lemon and vanilla to my cream cheese before I spread it on the dough.
    I also boil a little strawberry jam and use it to glaze the fruit topping. Our last topping was slices of peaches, strawberries and bluberries. Try it, I bet you and your family will love it.
    It's rich, and a little goes a long way.

    Fruit Pizza is very good and is nice to take to a gathering. We make it with sugar cookie dough for the crust, and top it with cream cheese mixed with sugar and vanilla, then top it with blueberries, strawberries, kiwi fruit, bananas, and grapes and then glaze it. There's never any left to bring home.
