This has a nice light flavor. I originally found it in some fondue cookbook in the 80's and serve it often.

LEMON SPINACH SALAD

½ lb. sliced mushrooms
1 lb. young spinach leaves, washed and stemmed
6 Tbs. olive oil
2 Tbs. lemon juice
¼ tsp. salt
1 Tbs. grated Parmesan cheese
1 clove garlic, slivered
Finely grated rind of ½ lemon
1 hard cooked egg
Freshly ground black pepper

Wash mushrooms and combine with spinach. Chill. Mix oil, lemon juice, salt, cheese and garlic. Chop up egg and sprinkle over salad. Add lemon rind to salad and grind pepper on top. Pour dressing over salad right before serving and toss.

Note: Best if dressing is made about an hour ahead of time and garlic pieces removed before pouring on salad. Crumbled bacon pieces can be added if desired.

    As a "cursed" single (resigned to my fate) - another typical
    Friday night: a can of Campbell's chicken and wild rice soup
    plus a ham sandwich, probably curled up in front of the TV to
    watch a movie, etc.....

      Come on now, !! I'm single, too -- tonight I'm having boiled, cold shrimp and steamed asparagus - with nice crisp white wine. YES!!

        Leftover venison roast, turned into sandwiches with jalepenos and onions on fresh homemade baked bread, along with a bottle of Austrailian red wine, we will be mellowing slow tonight!

          Sounds excellent! I can take wine now and then, but mostly
          sodas, which I know at my age I should be cutting back on...

              The wine is Cookoothama, a Cabernet Merlot 2001; from southeastern Austraila.

                Jungle Jim's ad says they have Kangaroo Medallions at $13.00 (U S) per pound. We May have to do another run up that way before the ad dies on Monday.
                I mean who could pass on Medallions like that?? A little Swamp Grass and some Lemon Zest ..onto and off the grill in no-time ...Yep I can taste a dinner coming !!

                    S.O is at work and I'm home alone cooking I'm in a Thai mood (as I am often) and tonight we're having Laab with ground turkey, some kind of chicken stir-fry (haven't decided precisely which yet, may depend on whether I can find some nice-looking basil at the asian market later) steamed collards and sticky rice

                      Its football time in Tennessee and today the VOLS entertain the Crimson Tide of Alabama at 3:30PM. The Sundancer has tickets but as usual my tickets go but I stay. I will watch it on CBS with a homebuilt pizza and salad and perhaps a tad of spirits to elevate my spirit

                                OK the Saturday nite supper was Roasted Chicken, Czech Sweet/Sour Cabbage, and Butternut Squash. The Squash halves were baked with the chicken, and the chicken gravy was a great topping for the Squash. The cabbage stands alone, but the chicken...a full-sized roasting capon had a bit of Lemon Pepper Seasoning on it to enhance the skins flavor. No dessert tonight. That Cabbage is all I need!

                                  We went to "The River Cafe" at the foot of the Brooklyn Bridge (Brooklyn side, on the East river below Grimaldi's, just off the water taxi dock) Saturday night, and I think we have found a new favorite restaurant in New York. Outstanding appetizers, excellent seafood and scrumptuous desserts.
                                  The dining area is surrounded by floor to ceiling glass, and banquette seating means that every diner has a view of the East river and the skyline of the Manhattan financial district. Beautiful at night, and not shabby in daylight, either.
                                  I liked it better than Union Square, Gramercy Tavern and other top end New York restaurants where I have eaten because of the relaxed but attentive service. Service at Union Square and Grammercy sometimes seems harried to the point of near panic, but the staff here was truly professional. But with a prix fixe of $78 for a 3 course meal ($96 for 6 course sampling), they can be more relaxed without having to worry about table turnover. (Total for 4 (3 course with wine) was $452 including tip).

                                    We have eaten at Gramercy Tavern several times and have had the nicest and most professional service that one could ever want. We sat at our table for well over 2 hours the last time we ate there and never sensed any server being harried, showing the least bit of panic or acting nothing but very welcoming and professional.
