You should check out some of the Memphis threads here. Do a search. That city has some truly great eateries.

Are you heading straight across 40?? Are you planning any stops along the way that aren't meal related??

Assuming that you will be driving through Knoxville, I suggest Louis on Broadway.  I have taken several members of Roadfood there and all agree that this restaurant is very special.  It has been in Knoxville 55+ years.  I had my first dinner there when I married my wife who is now deceased.  It is a Tennessee Greek place that does a very unusual spaghetti which is slightly salty and very meaty.  Great onion rings and garlic bread.  It is directly on your way east and just a block off the interstate bypass.

    First:  Welcome to Roadfood!

Second, in Nashville I highly recommend that you try Hot Chicken.  The most famous of these places is Prince's, but there are several others such as 400 Degrees

Don't make the mistake of ordering the 'hottest', a notch or two down is plenty hot enough.

Here is a 'documentary' on Prince's produced by Old Miss.  Enjoy!
