Dry Rub...what's your favorite? Tue, 07/5/05 7:51 PM (permalink)
I recently used dry rub for the first time on some ribs. We used "Stubb's", it was really good. If you have a favorite, let me know. Our annual party is next month when we cook ribs all day and I would like to BBQ with a rub this year. One with a little bite might be nice:)

    I find Wild Wally's Wonderful Wub to be the best, you will have to ask Alesrus for the recipe.

      I was looking up dry rubs here on the forum and somebody had Alton Browns recipe listed. I threw it together and its awesome. Unfortunately, I cant find the recipe right now.

                if you follow the " basic" idea, it's easy to make your own and modify to you own spice like/dislikes and heat level.
                The main thing is maintaining your proportions of salt, sugar, etc.
                Ribdog, I notice Dr. bbq uses 2 kinds of sugar. Do you know his reasoning behind that? Sounds good.

                  I think the turbinado is less likely to burn than the brown sugar. Thus the higher percentage to TB. Plus, there is definitely a taste/flavor difference between the two. I will pose the question to him though and see what he says.

                      I agree that the turbinado is less likely to burn. Also, Brown Sugar is less sweet to me. It will penetrate the meat faster and turbinado seems to stay more on the surface. Two layers of flavor and texture there.

                            Hi all,
                            I use two sugars in that rub because they are different. Yes, the turbinado is less apt to burn, but it also doesn't have a very distinctive taste to me. It's just sweet. I like the taste of brown sugar, but using just that can make it taste like a cookie. So I like to combo.
                            I think that rub recipes is a good and basic one. If you like it hotter, just add some cayenne, or habanero powder if you dare. Like more garlic? Add some.
                            BBQ rubs are really just the same old spices, mixed together. The main difference is the addition of the sugar, and you can even skip that if you want.

                              I dont have, nor ever use a recipe. Whats in the kitchen is what the rub originates from... But I do like adding Mesquite powder for flavor... Along with salt, pepper, garlic, maybe some fresh squeezed lemon.. The list goes on...

                                I used the rub on pork ribs and a pork butt, both came out great. I used the 3,2,1 method on the ribs, but since they were baby backs adjusted it 45,45,25.

                                I detected chile powder, salt, garlic, cyannne, pepper, and cumin in the rub.

                                There were a bunch of great rubs posted, based on those I my create my own.

                                  do u need to boil ribs before rubbing?for someone like who doesnt have a smoker?how can i make the meat fall right off the bone onced cooked?and also aside from the rub do u baste it with some sauce while on the grill?

                                      I never boil ribs, some people get the results they want by doing that but I do not prefer that method.

                                      What kind of ribs are you doing, that will make a difference in the method. Baby backs take less time then spare ribs, and I never make beef ribs so I can not help there.

                                      The alternative to boiling is cooking with a low temperature for a long time, you retain the flavor and get the tenderness that is a sign of a perfect rib.

                                        I always say no to boiling, unless you're making rib soup. I've got a pretty good recipe on my website. It's from my book and it's adaptable to just about any grill.

                                          boiling ribs is against the law in some states(lol). the best way to get "falling off the bone" is to wrap the in foil with a little liquid of personal choice(i.e. apple juice, coke, bbq sauce, cherry wine, balsamic vinegar, e.t.c.) for the last hour of cook time. careful, too much foil time will take away all the wood flavor. best to limit to 30 min at 275, then a one hour rest at room temp. resist the urge to open foil as this will dry out the ribs. you may check the tenderness by wrapping a cloth around you finger and pressing lightly between two bones. feel the softness of the meat..hhmmmm..

                                            Hey Dr BBQ...just saw you on OLN tonight...Congrats!

                                            Your Brisket looked delicious..wish I could have been one of the judges...


                                            I made up a rub last year that I really like and do well with....it is a paprika style rub...

                                            however, a former friend of mine bought a store bought rub that came in a small brown paper sack...the rub was greenish in color.....That stuff was amazing on a Butt...but I can't find it anywhere...

                                            I've been playing with a few different mixes..but just can't seem to come close on it....I really want to find a new signature Rub.

                                              I am by no means an "expert", but people seem to like my ribs. Here is what I do: 1)Peel the clear membrane on the back of the ribs. This allows the various spices/sauce to penetrate the meat. 2)I use a dry rub of brown sugar, salt, black pepper, white pepper, cayenne pepper, paprika, onion powder, and garlic powder. Mix all of these in a bowl, and rub into the uncooked ribs. 3) Brush ribs with a little of your favorite BBQ sauce, and place into an oiled foil bag. Liberally baste with your favorite BBQ sauce, and let ribs carmelize (about 7-10 minutes).                                                   I usually make my own but as far as a commercial rub goes I really like Arthur Bryant's Meat rub. Just sweet enough and just hot enough...

                                                            "Lucious the King" from Memphis. You can buy it in Cincinati area Kroger's and probably other Krogers too. If your local Kroger dosn't have it ask them to get it for you. I used to work on developing my own rub but I found "Lucious the King" about 15 years ago and gave up my quest.
