Easter Pizza

Hi are any of you making Easter Pizza or Pizza Rustica?  I would love a recipe.  My childhood friend's mother use to make it but she has passed away.  Fond memories of being at her house.

    Oh you guys are bringing back memories of my childhood. Today,being Good Friday was another tradition in our Neopolitan home:Spinach pizza...basically a stuffed pizza stuffed with spinach fried in garlic and olive oil. God,it was good!!!!If you're one of the pizza makers out there and never had this, give it a try!!!!

    You can scale down a huge recipe & use a basic pasta frolla (short pastry crust) to fit a 9 inch pie plate. Using pasta frolla lightens the texture & adds some balance to the heavy savory aspect to Pizza Rustica.

    You can also replace a portion of the incredible amount of liquid eggs most recipes call for with chopped hard-boiled eggs. That provides a nice balance to the texture & keeps it from being dense or like custard . If using ricotta cheese drain it so the filling remains creamy & the crust won't get soggy.

    I was taught to use a yeast dough and not a pie pastry type crust.  My preference is for a creamy inside loaded with meat.  I have had dry ones and they are NOT good!
