Easy Apple Amber - I love it

I just finished cooking it, I wanted to share. Serves 4 450g (1lb) Cooking Apples 110g (4oz) Sugar (or to taste) 2 large Eggs, separated Juice of 1 Lemon Preheat oven to 180°C: 350°F: Gas 4. Peeled, core and thinly slice the apples and cook 2 tbsp of water, stirring occasionally until they form a puree. Separate the eggs. Add about ¾ of the sugar, the lemon juice and the egg yolks, mixing well. Place in an ovenproof dish and bake for 20 minutes. Whisk the egg whites until stiff and fold in the remaining sugar. Pile the meringue evenly on top of the apple mixture, return the dish to the oven, and bake for another 10 minutes. Serve hot or cold

Kevin: We made your apple dish yesterday and it was a real hit. Next time though, we'll add a bit of cinnamon to the apples and a touch of lemon or vanilla to the maringue. Cheers, John
