 Egg Custard Pie

Husband wants me to make one, I've internet search for recipes all basically the same except some call for 4 eggs and others for 3 eggs,please help never have made one before.Maybe a dumb question but does it make a diffenence in how many eggs?

    Honey, the only thing that extra egg will do is make your custard a little bit richer and firmer. I would suggest you use half and half or heavy cream instead of milk (if milk is what is called for in your recipe). The richness it imparts cannot be believed. Egg custard pie is not only my favorite dessert, but it is the dessert I am famous for (at least in my neck of the woods).

    Another tip: Put your pie shell on your oven rack and pour the egg mixture into the pie shell right there on the oven rack, then oh-so-carefully slide your pie into the oven. Much easier than trying to carry the filled pie shell to the oven and getting it in without spilling.

    I also think it's a good idea to brush your pie shell with a little beaten egg white and prebake it for about 8 to 10 minutes before you fill it. It keeps your crust from getting gummy.

    Don't forget to grate fresh nutmeg on the top of your pie before baking it, and do use very fresh eggs, heavy cream, and very good vanilla.

        brightcopperkettles, thanks again made the pie last night my husband loved it said it was as good as his Mom's I used half and half and you were right about leaving the pie shell on the oven rack when pouring the mixture in. Thanks again.

          I'm so glad! I usually use half and half as well because I seldom have heavy cream on hand (and half and half does make a really nice pie). Curious, did you use 3 or 4 eggs? I think I usually just use 3.

            I used 4 because they were a medium size

                  Yes mamm, retired a Captain after 25 years with the Los Angeles Fire Dept. My manners are impeccable, despite that firefighter thing hanging over my head. Give a hey to my Brother there, would you?

                      That's a good idea. But no more RV's, we're back to big rigs. They're easier to collect from.

                        I'll certainly pass that along! And you're being silly, because firefighters have superb manners, you goose! Otherwise, how would y'all catch all the sweetest women...and the best cooks too! Just ask my husband!
