I like egg salad sandwiches in the summertime but I think mine are bland and was wondering if anyone had a recipe they'd like to share.

Don't know about proportions, as I tend to cook with an eye to what "looks" appropriate, but I love to add chopped onions, currants, and curry powder to spice up my egg salad.

I don't use a recipe with set amounts, but my egg salad has chopped boiled eggs, mayonnaise, chopped dill pickles, salt, and pepper.

I add a little bit of chopped fresh chives or finely minced green onion tops.

I like to zing it up with some mustard powder, sometimes some garlic powder, a few drops of Tabasco. Capers are good too.

Sometimes, I add chopped bacon to mine and sometimes I add chopped pecan, a little bit of onion and lemon juice.

I like Olives in Egg Salad. Greek ones pep it up. Try pepperocinis too.

Some excellent suggestions, guys. I'll be making a batch soon and adding some of these things. I love pepperoncinis and had not thought of that. Bacon is a good idea also.

I like to do about a 3:1 mix of mayonaise and mustard. I add chopped onion to egg salad and tuna salad sandwiches.

chuckling to myself because I just posted about egg salad under eggs in the brkfast forum... I like my egg chopped/fork mashed fine, some miricle whip and minced onion, sometimes a sweet pickle or dill relish, sometimes (depending on mood) chopped up "lubi's" hot peppers, served on toast with a slice of tomato...

try using pickled eggs in your egg salad, and if you live in the south try using Dukes Mayo instead of Miracle Whip, its a lot tastier!! Also try using a lil bit of canned cheese (you know...Easy Cheez) in your egg salad

minced pimento stuffed green olives, onion, sweet and dill pickle, a little fresh parsley salt, pepper and mayo. that has a nice taste.
