Egg-less batter recipes

Seeing the recent articles and posts about chile rellenos got me wanting to try my hand at making them, but every recipe calls for a batter made with eggs. I am very sensitive to the lovely little things (didn't used to be), so while an egg batter won't kill me, it can make me feel a lot of discomfort, so it's not worth it to me. I've never really dabbled in batters, so if anyone has any good recipes, I'd gladly welcome them. They don't have to be strictly for something like a relleno, any type of eggless recipes are good. Thanks!

We've been using a buttermilk-flour batter for onion rings lately and like it better than other batters. It should work for rellenos, as well. You'll probably want to halve this for your chiles. Start by mixing a tablespoon each of salt, pepper and paprika into a couple cups of all-purpose flour in a large bowl. Add one teaspoon of cayenne (or to taste) to the flour mixture. Pour a couple cups of buttermilk in another bowl. Place your chile into the buttermilk. Then roll the wet chile in the flour to coat. Repeat dipping in the buttermilk and rolling in the flour. You are ready to fry your chile. Let me know if this works for you. jrp

A couple of different websites have the following recipe for an egg-less batter for deep frying such foods as shrimp that you might try: ½ cup flour ¼ cup water ½ tsp. salt dash pepper 1 ½ tsp. baking powder Combine first 4 ingredients; beat with a fork until smooth. Blend in baking powder, dip food in batter and fry.

Can you use the commercially prepared cholesterol free egg products? If not, then you can put that in the mix. Also can you just use the white of the egg?

Egg doesn't bother me but I prefer that when I batter certain foods for frying, I always omit the egg, Flour or cornmeal, oil, salt and pepper and some hot pepper. I double dip first in a dry mixture then into the wet and then into the hot oil. Works for me. Paul E. Smith Knoxville, TN
