 Electric griddle temp.

Hi everyone. I had a quick question for Deli owners out there. It's been a very long time since I worked in a deli. I have a flate top griddle 24" with two temp knobs. From experiance what is the best temp to set the griddle to for cooking Eggs for egg sandwiches and heating the sausage and bacon.

    cooking eggs I'd say 300 degree, and reheating the same once the sausage get up to 165 then you just remove them
