Enchiladas Casserole

Can't let this one go by. Rolled or flat, it depends on the refried beans (yes you can put them in), meat if you desire (in the rolled), and red or green New Mexico chile over it all. I like the rolled, because there are usually two or three at a restaurant, and stomach wise, they pretty much equal our huge burritos. The flat ones are great also, and I agree that what we call "Christmas" (red and green) is the way to go. My lady makes enchiladas that are great!, but no, you're not invited, cause I eat every bit of it!
